Lazy Day Cake

LAZY DAY CAKE:

NOTE: This recipe goes back as far as I can remember growing up, it was “from scratch” cake mix long before boxed mixes became available on the market.
It is such a basic recipe that can be the basis to use so many additives of fruits and flavours.  This one uses vanilla bean extract, I personally have used orange extract and it was so delightful! Lemon extract brought it to a new level too!  My husband’s favourite is to add 1 cup of dry fruit into the mix...
Hope you ‘all enjoy!!!

This Recipe will make a small to medium size cake.. 9x9 square pan (Pre-greased) with butter or baking paper to fit bottom and sides.
2 Eggs
1 cup of white sugar
1 teaspoon vanilla extract (Or whatever flavour you like best)
1 cup of cake flour
1 teaspoon baking powder
¼ teaspoon salt
(Or instead, use modern-day self-rising flour with no need of salt or baking powder)
½ cup whole milk (NO SUBSTITUTES)
2 Tablespoon REAL Butter (NO SUBSTITUTE)

Combine eggs, sugar and vanilla and beat until thick. Add dry ingredients.
Heat milk and butter to boiling point; add sugar mixture mix thoroughly.
Bake at (STATES): 350-Degrees  (OVERSEAS) 180-Degrees oven  30-40 minutes or until golden brown and centre is done by testing it with a skewer or knife comes out clean.

To Make a nice sized (Sheet Cake):
4- eggs
2-Cups of white sugar
2- Teaspoons of extract
2- Cups of Flour
1- Cup of milk
4- Tablespoons of Butter
Follow the above directions to mix and bake EXCEPT FOR THE BAKING PAN SIZE needs to be in a deep sheet cake pan instead.   11x15 is a good size for this amount of mix.
